Sushi – The perfect rice. Workshop by chef Gudmundur Freyr Ævarsson

Preparing sushi rice is a very important and basic part of the art of making good sushi, the 4 hours workshop will teach us how to cook and obtain the perfect sushi rice.

Sushi – The perfect rice will be held by Gudmundur Freyr Ævarsson, a professional chef from Iceland that has been living and working in Copenhagen for the past 6 years. Received Journeyman’s certificate as chef from the Hotel and catering college of Iceland in the spring of 1998. Ævarsson garnered his Japanese technical skills as an apprentice under a top Yakitori and sushi chef at Sticks`n Sushi.

More recently, he was sous-chef at Humarhúsið a fine dining seafood restaurant in the heart of downtown Reykjavik.
Chef with diverse culinary expertise from sushi, seafood, Nordic cuisine, to Northern Italian cuisine, he has catered for the movie 101 Reykjavík and was also part of the team catering for large concerts in Laugardalshöll. His diners included, among others, David Bowie, Skunk Anansie, and Sting. He has also worked as the head chef at Hotel Budir—considered on of the most idyllic countryside hotels in Iceland, often referred to as the ´Mecca’ of Icelandic cuisine.
